A Whale of a Kale Tale! Harissa roasted Kale sprouts with Cashews.

Kumquats and Kale - an interesting combination which really do not have much in common except for the common first letter in their names. But when I opened up the box sent to me from Melissa's produce , the visual beauty of the colors just struck a chord, the bright golden kumquats and the regally purple Kale sprouts.

Day 8 - The Penultimate stir fry

As the Festival of Navratri goes, this is the big day, the grand finale. Mythologically speaking, this was the day, the lascivious demons, Chanda, Munda & Mahishasura and the worlds first one man clone Raktabhija (from the sanskrit Rakta- blood, bija - seed. Legend has it that when each drop of his blood fell to the ground, an identical clone would rise. The goddess countered that by giving rise to Kali (the terrible one) who literally stuck her tongue out to drink every drop of Raktabija's blood before it hit the earth. Mahishasura put up quite a fight taking multiple forms before his final morph into a buffalo( Mahisha) at which point, the goddess pins him under the lion she is riding on and proceeds to eviscerate him. Who says Mythology is  dull? The prasad (offering) that I'm posting today is an edamame sundal. Edamame, like fresh green chickpeas has a delicate buttery texture that makes it ideal for South Indian stir fries. Its unlikely that you will easily st...

Dishes from my Other Blog - Pan fried Fingerling potatoes with Garlic Scapes (Day 189)

Potatoes.. how can ANYONE not fall in love with them in Infancy? On second thoughts. if there is an answer to that, the subjective self centered part of me does not want to hear it!    Raghavan Iyer , A culinary idol of mine, recently mentioned that he was going to work on a book with Potatoes as the main ingredient, and this definitely kicked me out of my inherent laziness with working with these marble sized spuds (i.e, Peeling them after boiling) that had spent more than 2 weeks in my kitchen's Lazy Susan. Summer is here, and so are the garlic scapes. I found these curly, wispy yet wiry beauties at my local Hillsboro farm . Garlic bulbs can be put aside for the winter, this is the time to relish the crisp garlicky flavor of these beauties. Simply dice and saute them lightly to bring out their flavor. You need: 2 lb fingerling potatoes (I used a medley of Reds, Goldens & purple Peruvians)  boiled and peeled 3 tablespoons olive or sesame oil 1 teaspoon cumi...

Stairway to Heaven - South Indian Style Kale stir fry

The 5th of January marked the auspicious day (according to the Hindu Calendar) of  'Vaikunth Ekadashi' (Vaikunth - Paradise, ekadashi.. The 11th day of the lunar cycle). As per Hindu tradition, this day signifies 'open house' in the Lord's abode when anyone leaving the mortal world to meet their Maker is assured of salvation, free of the cycle of birth & death. The day is marked by prayer and fasting. Perhaps the best way to explain the significance of this tradition is to refer to Devdutt Pattanaik's article on the topic . But unlike other occasions, the fast is not broken by decadent culinary offerings  but with a simple pepper flavored gravy, plain rice and a stir fry made with the leaves of the hummingbird tree ( Sesbania grandiflora ). Known as 'Agathi Keerai' in the Tamil language, it finds applications in Southern Indian & Thai cuisine. Image credit : indiagardening.blogspot.com The texture of the leaves is somewhat leathery an...
